French 75

1 oz London Dry Gin
1/2 oz Simple Syrup
1/2 oz Lemon Juice
4 oz Sparkling White

Combine gin, simple, and lemon in a shaker and the pour into a coupe glass. Top with sparkling. Garnish with lemon peel.

notes: This makes a great brunch cocktail. I have made it my annual Easter Brunch.
