Arizona seems to be more of a whiskey state, or maybe tequila. The gin market is a little slow in comparison. I tried four local gins on my first visit to the state in 2025 and chose Commerce Gin for the collection because they actually source botanicals from Northern Arizona.

I visited the distillery on February 19 and it is a beautiful copper bar with big glass windows showcasing the copper stills. I ordered a dry martini and enjoyed the flavor profile. I walked out with a bottle of Commerce Gin for $30 more. This was the first Arizona gin I ever tried and the first one added to The Collection.

The botanical base is a play on The 5 C’s of Arizona. That’s a real thing and something they teach school kids there. Look it up. But like me, you’ve probably never heard of it. Nevertheless, this gin features 5 C’s of its own: cardamom, coriander, cumin, cinnamon and citrus, the citrus being lime zest. It also includes lavender and apples.
It is good enough to drink neat at 85 proof, but works well in both a martini and a gin and tonic. The lavender and apple are subtle, but really round out the spicier notes. It’s a little light on the juniper, but it’s still there. Overall, a good gin at a fair price and the distillery is absolutely worth a visit.
