I can’t say the name of this cheese without singing the song by the Police in my head. If you are too young to know what I’m talking about, look here.

I got this one at the Concord Cheese Shop. It is a Jersey cow milk cheese from Oaklands Farm in Maine. The most interesting thing about it is that it is coated in native sumac. This gives the rind character, which is good because the cheese itself is very mild.

You can buy it from the farm in 2lb wheels for $40. So call the price $20 per pound, but you are buying in bulk. At the Cheese Shop, the price was almost twice that. I’m not overwhelmed by this cheese. It is too mild to eat on it’s own. I do like the flavor of the rind which reminds me of fall air and fallen leaves, but it’s not enough to drive me back, especially at that price point.
