Gubbeen

I wanted an Irish cheese for St. Patrick’s Day so I gave Gubbeen a try. Gubbeen is a washed rind, cow’s milk cheese from County Cork. It has been made by Tom and Gina Ferguson since the 1970. Gubbeen Farm produces many things, including oatcakes, smoked meats, and greens, but they only make one cheese.

Gubbeen Cheese is semi-soft with an earthy, pleasantly funky flavor. We got our piece at The Concord Cheese Shop. It was priced at $38.99 per pound. While I enjoyed it, it isn’t a cheese I would quickly go back to, except for St. Patrick’s Day. But if I can give you one reason you should try this cheese at least once, there is a strain of lactic acid producing bacteria which was found after a study of Gubbeen and named for the cheese, Microbacterium gubbeenense. That’s nerdy cool.
