Swallow Tail is a tomme style cheese made by Stony Pond Farm in northern Vermont. The farm’s dairy is part of the Organic Valley co-op and has been making cheese since 2019. Swallow Tail is made from raw Jersey cow’s milk and cave-aged three to six months in small batches.
The flavor is mild and earthy. We got our piece on May 25, 2024 at the Concord Cheese Shop for $34.99 per pound.
