From a giant wheel, we got a slice of Beaufort d’Ete from The Concord Cheese Shop. This version of Beaufort is made only with summer milk. It’s a flavorful Alpine cheese which is both nutty and creamy. The taste is slightly pungent and stands up nicely when paired with charcuterie. At $49.99 per pound, it isn’t one we are in a hurry to get again.
