Corsu Vecchiu is technically a French cheese, but that is a bit of a stretch geographically. As it's name suggests it is produced on the Island of Corsica in the Mediterranean Sea.
Kamiku Curado Ahumado
Kamiku is a Spanish cheesemaker and "Curado Ahumado" literally means "cured smoked". Kamiku Curado Ahumado is a smoked version of their traditional sheep milk cheese.
Chabichou du Poitou
Chabichou has an edible, wrinkled rind. Cutting into it reveals a bright, white center surrounded by a creamy yellow edge. The taste is rich but tangy and goes nicely with fig jam or a slice of prosciutto.

If you are stuck in on a snow day and want something hearty and comforting, this is a rich and flavorful dish that is sure to do the trick. Best served over mashed potatoes, it takes a good amount of time to make so start early. The good news is that most of the time is inactive, so once you put it in the oven you can sit back and relax.
