Chabichou is a beautiful goats milk cheese from west central France. It was awarded Appellation d’Origine Contrôlée in 1990, limiting the area from which it can come to the Poitou, Berry, and Perigord regions of France.
We purchased a half round at Formaggio Kitchen for New Year’s Eve 2023 for $7.95. A full round weighs about five to six ounces so the cost is about $45 per pound.
Chabichou has an edible, wrinkled rind. Cutting into it reveals a bright, white center surrounded by a creamy yellow edge. The taste is rich but tangy and goes nicely with fig jam or a slice of prosciutto. It is a wonderful addition to a cheese plate, a big step up from most goat cheese.
