Kamiku is a Spanish cheesemaker and “Curado Ahumado” literally means “cured smoked”. Kamiku Curado Ahumado is a smoked version of their traditional sheep milk cheese. It is produced in the Spanish Pyrenees in Legasa-Navarra. Their sheep are the Lacaune breed, originating from the Roquefort region of France.
We purchased a small slice at Formaggio Kitchen for New Year’s Eve 2023 for $4.31, a reasonable $26.95 per pound.
Ahumado is smoked using beech and oak. The flavor is strong but not over powering. The cheesemonger at Formaggio told us it reminded him of smoked salmon, but I found it to be more nutty. For a smoked cheese it is excellent, but the strong flavor is slightly limiting. If you are looking for something different to add to your cheese plate, Ahumado is a good choice.
