Corsu Vecchiu is technically a French cheese, but that is a bit of a stretch geographically. As it’s name suggests it is produced on the Island of Corsica in the Mediterranean Sea. “Corsu Vecchiu” translates roughly to “Old Corsican”. The Société Fromagère Corse gathers sheep’s milk from around the island to produce this bold but accessible cheese.
This is an excellent Tomme style cheese with a strong flavor profile. It is aged a minimum of five months, usually six to nine and the result is a cheese that is nutty with salty, grassy notes. The rind, which is edible, is more pungent and tangy.
We purchased a small slice at Formaggio Kitchen for New Year’s Eve 2023 for $4.83, a significant $43.95 per pound. Don’t let the high price deter you. Corsu Vecchiu is excellent.
