The only thing on the agenda for April is Easter which includes a visit from my mom. I’m sure there will be some good food while she is here and otherwise who know what we will get into this month.
April 1
Taco night: Pig Rock chipotle-lime chicken sausage and poblano in a sauce of butter, tequila, and Guatemalan hot sauce, topped with white onion and cilantro.

April 2
Tonight was a salad with chicken, cheese, tomato, red onion, and homemade dressing.

April 3
My in-laws came over for dinner. I made pork tenderloin, green beans with onions, mashed potatoes, and heated some Wilson Farm frozen dinner rolls.

April 4
I had dinner with my Cambodian family tonight. Chovry made Ya Hon, Cambodian hot pot with lots of seafood. I also tried a new gin that Sotheara had, Mermaid Zest. It was a lovely meal and a great time.

April 5
It was a cold and rainy day. We took a ride to drop things off at Michael’s and had a late lunch or early dinner at Fishbones in Chelmsford. I got a cup of chowder for the chowder quest and then Kelly and I split a fish and chips which was really very good.

April 7
I went to Brother’s Roast Beef for lunch. I was having a hard time deciding what to order and ended up trying the Reuben. It was good, the first thing I really liked there besides the roast beef.

April 8
I made another salad for dinner: Arizona spiced steak, tomatoes, cheese, onions, carrot, and my homemade cilantro-lime dressing.

April 9
I met up with Michael for dinner at The Bancroft. We tried two new dishes. The Carpaccio had good flavor but only three pieces of beef and a terrible fried artichoke which was basically inedible. The Schnitzel, though not traditional, was much better. Topped with a fried egg, it was served with a side of chervil spaetzle. I also tried a new gin, Malfy. I’m quite certain I have had it before, but it wasn’t documented on the list.

April 10
I tried ham and pea pasta for the first time. I used fresh shucked peas from Wilson Farm and made a sauce of butter, garlic, flour, heavy cream, and pecorino, all smoothed out with pasta water. I added some lemon zest, but wouldn’t do that again.

April 11
We took Thomas to Row 34 tonight so that Thomas could try fish sticks for the first time. He really liked them and I really liked the BBQ Mackerel. We also tried mini shrimp tacos and crab rangoon for the first time. I would pass on those two next time.

April 12
I made chicken and rice tonight with some doctored up canned black beans. It was simple but amazing.

April 13
I get the cheeseburger club at Ken’s a lot, but I almost never get the more traditional turkey club. If I didn’t have a picture of it on my Ken’s post, I could be convinced I never ordered one before. I liked it a lot, but I’ll still get the cheeseburger one more often.

April 16
I had leftover chipotle peppers from my chicken and rice so I made chipotle sweet potatoes. I served them topped with steak.

April 18
Mom is in town and today we stopped at Karma to get a little lunch, crab rangoon, calamari, and pad thai.

April 19
Today was the Concord250 celebration. The 250th anniversary of “The Shot Heard Round the World.” We has street food at the parade, but when we got home, I opened Mind Your Manners Gin, while we prepped for Easter brunch. My mom had brought me it from St. Louis. It’s gin no. 108 of my collection.

April 20
Easter is my biggest cooking day of the year and I barely take any pictures because I’m so busy. I made a ham and a lamb lasagna. I also made a pitcher of hurricanes and paloma mimosas. Here is the start of the meal when I was still taking pictures.

April 22
We took my mom to Bandoleros for a last dinner in town. I got the Choripollo for the first time. It was really great but meat intense. Next time I’ll get a side of pico to go with it.

April 24
I made some scrambled eggs with leftovers from Easter for breakfast. Then for dinner we ate the end of the Easter Cheese. Since it was Michael’s birthday, I met him in Boston for drinks and tried Wild Snow Dog Gin for the first time.

April 24
I tried a new roast beef place today, Bella’s in North Andover. This was the best roast beef I have had so far, but the chicken fingers were a little pale. Thomas did enjoy the pizza roll which was a win. Despite being good, it’s too far to go back to.
