I don’t know why I never made Shepherd’s pie before, and usually I try a recipe a few times before committing it to writing, but this turned out so good in just one try that I have to document it, if only so I can make it again for myself.

I had intended to use garlic not shallot but my garlic had sprouted. It turned out so well that I will keep the substitution.
I had a cup of beef stock but I needed more liquid. I added about a third of a cup of water to thin out the gravy.
I’m not including a recipe for mashed potatoes. I made them as I usually do with butter and cream, but made them a little thinner and then added in about half a cup of parmesan cheese.
After taking it out of the oven, I garnished it with scallions to add a little color.
